Creamy Vegan Pesto Pasta

Hi, I am Mari, and I would like to share with you one of my healthy recipes.


Ingredients (enough for 4 people or less) 

3 cups of pasta (made from quinoa, chickpeas, lentils, or heart of palm) 

3 cups of fresh basil 

3 cups of fresh baby spinach 

¾ cup of raw cashews (or another type of nut but cashews work better) 

3 spoons of plant-based cream cheese 

¼ cup of nutritional yeast 

2-3 garlic cloves or 1 tsp of garlic powder or 1 tsp of minced garlic 

½ teaspoon of salt 


How To Prepare:  

1. Boil your pasta. While pasta is boiling, blend all ingredients in food processor until completely combined, scraping down the sides if necessary. 

2. Strain pasta (rinse if gluten free), then mix pesto into pasta. 

3. Serve and enjoy!
