Chocolate Pudding Cake (my dad’s absolute favorite birthday cake!)

Ingredients:
2 cups all-purpose flour
1 ¾ cups sugar
1 teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 1/3 cups water
½ cup butter (softened)
1 teaspoon vanilla
2 eggs
3 squares (3 ounces) unsweetened chocolate, melted and cooled
1 package large Cook-and-Serve chocolate pudding mix
Optional: walnuts and chocolate chips to sprinkle on top
Directions:
Preheat oven to 350 degrees.
In a bowl combine flour, sugar, baking powder, baking soda and salt. Add water, butter, and vanilla.
Beat with an electric mixer on low to medium until combined. Beat on high speed for 2 minutes. Add eggs and melted chocolate; beat 2 more minutes
Grease and flour a 9x13 inch rectangular baking dish (preferably glass).
Prepare pudding according to package directions.
Pour a thin layer of cake batter in the baking dish, followed by a thin layer of pudding. Pour another thin layer of cake batter, followed a second thin layer of pudding. Finish with a final top layer of cake batter (cake, pudding, cake, pudding, cake). Optional: sprinkle chopped walnuts and/or chocolate chips on top.
Bake in a 350 degree over for 35 minutes. Cool thoroughly. Enjoy!
BONUS: if there is any pudding left over (and there usually is), we all get hot pudding to share!
