Chocolate Pudding Cake (my dad’s absolute favorite birthday cake!)

Ingredients:

  • 2 cups all-purpose flour

  • 1 ¾ cups sugar

  • 1 teaspoon baking powder

  • ¾ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 1/3 cups water

  • ½ cup butter (softened)

  • 1 teaspoon vanilla

  • 2 eggs

  • 3 squares (3 ounces) unsweetened chocolate, melted and cooled

  • 1 package large Cook-and-Serve chocolate pudding mix

  • Optional: walnuts and chocolate chips to sprinkle on top


Directions:

  • Preheat oven to 350 degrees.

  • In a bowl combine flour, sugar, baking powder, baking soda and salt. Add water, butter, and vanilla.

  • Beat with an electric mixer on low to medium until combined. Beat on high speed for 2 minutes. Add eggs and melted chocolate; beat 2 more minutes

  • Grease and flour a 9x13 inch rectangular baking dish (preferably glass).

  • Prepare pudding according to package directions.

  • Pour a thin layer of cake batter in the baking dish, followed by a thin layer of pudding. Pour another thin layer of cake batter, followed a second thin layer of pudding. Finish with a final top layer of cake batter (cake, pudding, cake, pudding, cake). Optional: sprinkle chopped walnuts and/or chocolate chips on top.

  • Bake in a 350 degree over for 35 minutes. Cool thoroughly. Enjoy!

  • BONUS: if there is any pudding left over (and there usually is), we all get hot pudding to share!
